Funnel Cake with a Twist!

Ingredients
  

  • 4 cups Flour
  • 3 tbsp Baking Powder
  • 2 tsp Baking Soda
  • 1 tsp Salt
  • 3 Tbsp Sugar
  • 1 cup Milk preferably whole milk
  • 1 Egg
  • 1 tbsp Lemon Juice
  • 1 tbsp Sugar
  • 1 tbsp Vanilla
  • Peanut Oil
  • Strawberry Preserves
  • Fresh Strawberries Halved
  • Powdered Sugar

Method
 

  1. Mix first 5 dry ingredients in a large bowl.
  2. In a different bowl, add 1 cup of dry mix, 1 cup of milk, 1 egg, 1 tbsp lemon juice, 1 tbsp sugar and 1 tbsp vanilla. Mix thoroughly.
  3. Preheat 2 cups peanut oil over medium/high heat in cast iron pan.
  4. Test readiness of oil by dropping a small amount of batter into pan to see if it starts frying.
  5. Pour mix into the oil in a circular motion beginning with a rind along the outside and filling in the circle as you pour.
  6. Fry for approx. 5 minutes until golden brown. Flip cake and fry additional 5 minutes or so.
  7. Carefully and slowly remove funnel cake from oil. Place on serving platter or dinner plate.
    (placing on paper towel to absorb oils is an optional step)
  8. Sprinkle with powdered sugar.
  9. Add a few dollops of strawberry preserves and fresh strawberries on top.
  10. Add a little more powdered sugar.
  11. Best when eaten warm!
