Oatie Chocolate Chip Muffins

These babies have oatmeal in ’em. I’m pretty sure that means they are healthy – but I know for a fact it means they are so good!

The vanilla and brown sugar give a bit of a sweetness that makes them perfect for dessert, after-school snacks or breakfast on the go.

Oatie Chocolate Chip Muffins

This recipe can be easily doubled (or tripled) to feed a crowd.

Ingredients
  

  • 1 egg
  • 1 ¼ cup quick oats
  • 1 ¼ cup all-purpose flour
  • 4 tsp baking powder
  • ¾ cup packed brown sugar
  • ¾ cup mini chocolate chips
  • 1 tsp salt
  • 2 tsp vanilla
  • ½ cup vegetable oil
  • 1 ¼ cups milk

Method
 

  1. Combine oats and milk. Let them soak for 15 minutes.
  2. Preheat oven to 400° & grease or line muffin tins
  3. Stir egg, oil, 1/2 cup of brown sugar into the milk and oat mixture
  4. Combine flour, baking powder and salt. Add oat mix to flour mix stirring until the dry mix is moist.
  5. Fill each cup of muffin tin 2/3 full
  6. Sprinkle the tops with remaining brown sugar (you could add some chopped pecans as well to the brown sugar for a crunchy topping)
  7. Bake for 20-25 minutes
